O café é uma bebida popular consumida em todo o mundo e sua qualidade está diretamente relacionada ao sabor e aroma. Neste trabalho, testou-se o efeito de diferentes concentrações da levedura accharomyces cerevisiae sp.na qualidade do café. Para isso, inoculou-se diretamente em cafés arábicas provenientes de duas diferentes altitudes (750 metros e 950 metros) concentrações de 0,1; 0,4; 0,7 e 1% da levedura Saccharomyces cerevisiae sp., em seguida, cada amostra foi acondicionada por 120 horas (período de fermentação) em recipiente plástico higienizado. Após este período de fermentação as amostras foram postas para secar em estufa com terreiro suspenso previamente higienizado. A análise sensorial foi realizada no café torrado através da prova de xícara, de acordo com Specialty Coffee Association (SCAA). Para os dois experimentos (cafés provenientes de diferentes altitudes), não houve diferença significativa, para a nota global do café, entre as diferentes concentrações de levedura (Saccharomyces cerevisiae). No entanto, pode-se notar a influência das concentrações na alteração da percepção sensorial dos diferentes tratamentos. Cafés provenientes de regiões mais altas (950 metros) apresentaram maiores notas globais comparados aos cafés provenientes de altitudes inferiores (750 metros). Na etapa fermentativa do café, vários microrganismos estão presentes, desta forma, a inoculação de microrganismos selecionados nesta etapa pode auxiliar na inibição de microrganismos indesejáveis e contribuir para uma melhor qualidade do produto e sua padronização.
Coffee is a popular drink consumed worldwide and its quality is directly related to taste and aroma. In this work, we tested the effect of different concentration of Saccharomyces cerevisiae sp. on coffee quality. For this, it was directly inoculated in arabic coffees from two different altitudes (750 meters and 950 meters) concentrations of 0.1; 0.4; 0.7 and 1% of the yeast Saccharomyces cerevisiae sp., Then each sample was conditioned for 120 hours (fermentation period) in a sanitized plastic container. After this fermentation period the samples were placed to dry in a previously sanitized suspended yard. Sensory analysis was performed on roasted coffee through cup testing, according to Specialty Coffee Association (SCAA). For the two experiments (coffees from different altitudes), there was no significant difference for the overall coffee score between the different concentrations of yeast (Saccharomyces cerevisiae). However, it is possible to notice the influence of the concentrations in the alteration of the sensorial perception of the different treatments. Coffees from higher regions (950 meters) had higher overall scores compared to coffees from lower altitudes (750 meters). In the fermentative stage of coffee, several microorganisms are present, so the inoculation of selected microorganisms in this stage can help inhibit undesirable microorganisms and contribute to better product quality and standardization. The production of vegetables and grains by the family farming in the mountains of the Atlantic Forest is characterized by intensive soil management with ploughing and harrowing practices. These practices are promoting hydric erosion and losses of soil quality in the region. In this context, the objective of this work was to evaluate soil physical and biological characteristics at two seasons of the year in agroecosystems producing vegetables and grains in the no-tillage system (NTS) for 3, 5, and 9 years compared to the conventional management system (CT) in the Atlantic Forest Biome, Brazil. Physical and organic matter attributes and carbon (C) and nitrogen (N) stock were evaluated. NTS showed, in general, greater total porosity than CT systems. The main differences between the systems were found in the organic attributes and C and N stocks. The content of microbial biomass C in NTS with 3, 5, and 9 years was 767.5, 326.5, and 210.0 mg·kg−1, while the areas with CT had 93.75, 78.25, and 45.75 mg·kg−1, respectively. The stock of C in winter at the 9NTS area was 33.0 and 41.5 Mg·ha−1, and the respective area in CT presented only 21.75 and 25.00 Mg·ha−1 in the depths of 0?10 and 10?20 cm, respectively. The metabolic quotient of the NTS areas did not differ from the reference ecosystems and is promoting lower C-CO2 emissions than the CT system.
